Last night we were able to use the air fryer and stove top, so we had a regular dinner. Tonight they workers will all be gone so it is enjoy kitchen and try to get everything back in place including the dish washer. I am going to do veggies in the toaster oven and mash some sweet potatoes as well as pork steak with mushrooms and sliced onions. It will be so nice to have my complete kitchen even if it will still take a lot of cleaning. I will say. our contractor does a fantastic job of cleaning up after they do the work. This is why our whole family and a lot of our friends have used the same company. OK, I am totality off topic now. I know!!!!!!!

For me, I tossed a hunk of frozen beef into the crockpot with broth & lentils. I'll eat it today or tomorrow. I haven't had an appetite for so long & don't seem to enjoy any food, I don't know why I bother lately. Can't wait for this whatever... flu/cold/virus I've got to clear up & be gone. If all else fails, I'll force myself to have fruit, since I've got 18 oranges & 3 bananas thanks to Costco.

DH going to brine skin/bone in chicken breasts and smoke them, and a side of acorn squash and wild rice.

Used my new gas cooktop for the FIRST TIME last night -- I've had it hooked up for close to a week but work had been busy. Anyway, I made "roasted" potatoes, just a stovetop version ... nuked the potatoes for several minutes, then cooked them with butter and Tone's rosemary-garlic seasoning. Had them with baked chicken wings with some Thai sweet chili sauce ...


The potatoes turned out great -- the seasoning got pretty crusty and crispy on the stovetop, which was what I was hoping for. I had the gas on only level 2 (out of 6 I think!) and there was PLENTY of heat -- I am going to enjoy cooking with gas again! Oh, the wings were good too -- then again, I love just about anything with Thai sweet chili sauce.

My new ovens are being installed TODAY (contractors are working right below me!) so I'll be able to use them too! Yay!!

Take out Cuban food. We went to this place for breakfast last weekend and it was great! Not really thrilled with my dinner. Dogboa liked his though.

I made some cranberry apple/raisin stuffed pork roast...
will cook to 145f then let it set for 15-20 minutes the enjoy!!
