Mikala, it really isn't a recipe. I had seasoned pork belly in my refrigerator over night, I will blanch it in boiling water for about 10 minutes, pat it dry, pork holes in skin, slice and deep fry in vegetable oil in a dutch oven for about 20 minutes. I boil my grits the usual way* and just add 1/2 cup shredded white cheddar cheese 3 tbsp of unsalted butter.

Another day of pouring rain and unseasonable chilliness.



I made a pot of creamy herbed New England Corn Chowder, with a touch of smoked chipotle pepper. Open faced sandwiches on a study sunflower bread, lightly spread with dilled whipped butter - a choice of sliced eggs and chopped green onion or thinly sliced smoked Scotch salmon, thinly sliced radishes, and butter lettuce.



For desert, strawberry rhubarb cobbler and Irish Coffee each with a dollop of whipped cream,

That sounds great. Costco pork belly is pre cooked (souveed?sp), and you fry it up to finish! Love me some Costco!

Change in dinner tonight as we picked up some sashimi grade ahi, will coat with some hot spice and pan sear raw, spinach salad with miso dressing on the side.
