Lemons have a more confectionery taste. They go equally well with desserts and with fish. Meats, not so much. Lemon juice works as flavoring agent, but not as a marinade.
Limes are pure tartness with a hint of bitterness. They go well as a marinade base for many meats, particularly in Mexican and South American recipes. Desserts, less so.
I tasted both of them. Both of them tasted pretty sour to me. That's all I concluded.
So somewhat interchangeable in food recipes. How about where the fruit is tasted by itself - say if you take a tequila shot, and suck on a wedge of the fruit afterwards - one can tell difference between a lime and a lemon by the taste?
I can. I make guacamole, and I use lime juice. I have a friend who makes guacamole, and she uses lemon juice. Hers is flat. Mine isn’t — lime juice has a very different taste than lemon juice. It’s brighter.
Grocery stores sell limes that are not ripe, yet. Most lime varieties are ripe when they turn mostly yellow. Sort of like the difference between a Eureka lemon and a Meyer lemon.
And, generally, the smooth skinned limes are juicier than the rough-skinned.
For me, I think lemons or limes can be interchangeable, in SOME ways. Like, when I make a pot of 15 bean soup, I always squeeze some citrus juice...for ME it can be lemon OR lime.
But to drink, like lemonaide, or limeaide, or margaritas, or in my Corona, it needs to be lime...and I actually prefer lime.

The interchangeable part is the citric acid, which you can buy as a powder to get the equiv. tartness much more easily and inexpensively. Look at such things as the ingredient list of Kool-aid lemonade flavor mix and you'll see it listed instead of lemon. It only takes a tiny amount of CA powder to do the work of a whole lemon or lime.
The flavor difference can easily be determined if you eat a bit of miracle fruit, and then compare the taste of a lime and lemon. The miracle fruit numbs the acid and bitter taste buds.
