It’s just me. And it’s OK. I bought a filet mignon steak, and a salad. I’m making my favorite little chocolate cake, with some real whip cream for dessert.

Easy, no need for frosting....freezes very well.

Since I'm not with my family of origin for the holiday, I'm enjoying the prospect of planning a meal without having to consider everyone else's food issues and restrictions (nothing has to be gluten-free or vegetarian.) I'm not going all out for Christmas dinner, I'm making beef stroganoff with bacon-sauteed brussels sprouts, and I bought a nice piece of chocolate cake for dessert.

Our Viking ancestors were fish eaters so for years we had the traditional lutefisk and lefse. Now that all the "old folks" are gone and we are the grownups we've upscaled that to shellfish gratinee. Shrimp, lobster, crab and scallops in a tarragon cream sauce with a butter crumb crust on top.

Every summer I make a small jar of cherry olives in honor of my maternal grandmother and we have dill pickles wrapped in corned beef and cream cheese and sliced into pinwheels for our appetizers.

We always have peas and pearl onions and mashed rutabaga. Mom used to make a steamed molasses and cranberry pudding with hard sauce for dessert. And we usually had a large assortment of Norwegian Christmas cookies.

Later we'll go out for a church supper of lutefisk if we can find one anywhere. It's a dying tradition.

Doing the traditional Thanksgiving take-out meal again, and a Mexican take-out meal the night before (same as before TG). I'll also pick up another meal that is not turkey for the latter half of the long weekend. Looking forward to it! Again!

Having the lobster tails for New Years Eve that had been planned for Christmas. What would you serve with them? They are huge, so I only need sides. I’m planning on coleslaw, but haven’t decided what else. Maybe tiny new potatoes and a green veg?

I’m planning stuffed mushrooms before, and cheesecake for dessert.

I am making a whole filet mignon roasted in the oven 4 pounds for New years eve. It's just 2 of us but my husband said he will enjoy the leftovers. I am also making a low carb cauliflower casserole that has cheddar cheese bacon and sour cream in it. I'll post in the recipe forum. We might have another chopped salad as well. I have a hand held chopper that's actually over 80 years old but it is crafted very well . It's my great grand mothers and I had it hanging in my kitchen for the last 10 years and recently saw it and said "hey I can chop my salads with this. I'll post a picture tonight.
