My family has joined a monthly potluck group, where we get together with different themes. For the month of March the theme of green food. I like to bring two items, a savory one and something sweet. I am making cupcakes for the sweet and will decorate with green and shamrocks. I am stuck on the green for the other food item. One person is making a green lasagna, another one is making green eggs and ham, another green salad, yet another is going to make shamrock cookies. About thirty people show up. I was thinking maybe pinwheels- made with spinach wraps, with green veggies plus a couple others and cream cheese or what have you, and sliced thin. I think that might be too expensive. I did try to look up green food recipes, but just a bunch of St Patrick party ideas such as corned beef or potatoes. Maybe pizza with green veggies? I don't know how good that would be.

Anyone have any ideas? Thanks so much!

Broccoli casserole of some kind.

Broccoli salad w/walnuts and raisins like they used to make in the 90's.

Green beans come to mind and you'll find about a million recipes, both hot and cold.

I know this is too similar to green lasagna, but we make a baked ziti with pesto and diced chicken (usually left over from rotisserie chicken). You can also do a pizza with pesto instead of tomato sauce and top with whatever you like. Mix some into the dough, too.


Piles of work, but there's also green chili with green chilis and green tomatillos, white meat like pork or chicken or turkey.

Green rice


Cooked rice, drained chopped spinach, sliced green onions, cubes of cheddar cheese, can of mushroom soup, mix together, top with a bit of grated cheddar and bake as a casserole.


Cream cheese green onion pin wheels



Flour tortillas, cream cheese, sliced green onions. Spread cream cheese on totillas, sprinkle wioth green onions, rool up, and slice. These are really easy to do and they taste good.

A whole plate of green foods, while most likely quite tasty, doesn’t sound the most appetizing.

At any rate, I’d make a green vegetable salad such as broccoli or marinated green beans (perhaps with almonds, mushrooms, and a little red onion?) Tastes great room temperature and adds another nice fresh component to the meal.

Another option is a fruit salad with kiwi, grapes, and banana.

Or green soup? Like cream of jalapeño.

Well seasoned collard greens are green as is mustard greens... Those are in season too.

Deviled eggs with green food coloring.

Of course, if you want to really have fun, place some wasabi powder in some of the eggs ...
