PAN FRIED POTATOES
8-10 potatoes
2 med. onions
1/4 c. oil
Peel potatoes and slice. Peel onion and cut in pieces. Place oil in iron frying pan, heat. Put potatoes in pan. Place lid on pan and turn heat to medium. Cook for approximately 15 minutes turning as needed. Put onions in pan, replace lid, and adjust heat as needed. Potatoes will cook in 20-25 minutes, stir as needed to prevent burning. When done, place potatoes in colander to drain oil from them. Salt and pepper to taste.
Caesar salad is always a good choice, along with onions. I think onions are often overlooked as a side dish, and I don't understand that because they are very healthy. I also love grilled veggies. Asparagus, zucchini planks, corn...hard to go wrong with grilled veggies. As a last resort I am ok with a decent baked potato, but I only like them with real butter, sea salt, and freshly ground pepper.
My choice is Asparagus, maybe Mashed potatoe, or a Salad. A Baked Potatoe and easy
some will just do half, and it is healthy! Mushrooms, go good also! You maybe do steak, baked, potatoe
either a side of salad, or Asparagus, depending on price! If no Salad, I love Green string beans! Romaine is great with the Steak also!

I had grits one time, and, hey, I am a Bostonian! Was not so sure about them? It was in N.C.
Grits aren't "right" unless made from scratch (no instant stuff) and salted while cooking it. Don't use too much water and don't cook too long because they get too mushy. But they shouldn't crunch.
Put plenty of butter on top while they are hot!
If you have some grits left over, pour them into a glass baking dish to about 1/2 inch deep and chill in refrig overnight. Next evening, slice the congealed grits into bars about 1 1/2" wide and 3" long (more or less), dip in milk, then into salted, peppered corn meal. Fry in a small amt of oil (bacon drippings are wonderful) and serve hot. I used to put some butter and maple syrup on mine, but Momma and Grandmomma ate theirs just with butter and a little more salt and pepper.
I find the best side dish with steak would be grilled portobello mushrooms sauteed in a tart and fresh honey garlic cream glaze. Its extremely satisfying! I should know... enough said.
