I used to despise them!!!!! Except for cream of mushroom soup (which I had in some gourmet restaurant in Europe when I was a kid).

Now, I kind of like them. Like a nice stuffed mushroom. Yum. Even my wife will eat that. Or the other day, I was making beef bourguignon and I sauted some chopped mushrooms in butter to add to the stew...it smelled so good that I popped a couple in my mouth - YUM!!

I have loved mushrooms from the time I was a little kid - I wanted them in my omelets, as a topping on pizza, sauteed with onions and served on steak or sliced raw in a salad, etc. Whenever I go out to a restaurant, I almost always order a dish with mushrooms in it.

DH isn't a big fan of mushroom, though. My kids are kind of meh about them. But that's o.k., more for me .

Default Mushroom Trio recipe

Check out this recipe, courtesy of Mr. Food. You can use it to top baked potatoes, rice, garlic bread, veggie burgers or whatever else you want.

Mushroom Trio

  • 4 tablespoons (1/2 stick) butter
  • 1 small red onion, thinly sliced
  • 1/4 teaspoon black pepper
  • 1 (8-ounce) package white mushrooms, sliced
  • 1 (6-ounce) package Portobello mushrooms, sliced
  • 1 (3.5-ounce) package shiitake mushrooms, sliced
  • 2 tablespoons bourbon or dry red wine
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon salt
In a large skillet, melt butter over medium-high heat. Add onion and black pepper, and saute 4 to 5 minutes, or until onion is tender. Add mushrooms and saute 5 to 7 minutes, or until softened.

Add remaining ingredients and bring to a boil. Cook 1 minute, or until sauce thickens.

Talking LOVE mushrooms TOO...

I grew up Mom broiling mushrooms. They would turn kindof blackish & ugly, but they were still good.

I stir fry them in meals... sometimes I stir fry them with just onion & olive oil.

If we have left over french bread. I micro bread just enough to make bread soft add mozz or provoloneput mushrooms inbetween wrap in foil & bake in oven a bit just until cheeese melts. YUM !!!

TRADER JOES cream of mushroom soup in the box...OMG !!! We love that. It's very good
I've probably have used or put mushrooms in just about everything...
I haven't put them in my cereal or oatmeal yet. LOL...

I like them, but I can live without them. When they're old and marked down to half price or less, I buy a couple of pounds and freeze them. They can be sliced frozen, and in a cooked dish, are just like fresh.
