Absolutely everything. I adore the aroma, textures, the sprices, the nans, the curries, the vegetarian dishes. I was more or less raised on Indian and Pakistani cusine - ergo my fondness for it.

Wow that sounds incredible. Now I'm starving. I have fresh coriander on hand so that's a beginning!

Since we're on the topic... can anyone tell me how to eat hummus?
Scoop it up with pita bread.

I used to eat it on sandwiches, typically with french bread (a local café serves them), but I found using pita to scoop them up is much better.

Pretty much everything. The aroma, the texture, the colors, the spices, the variety of tastes in general.

Pita bread is a fine scoop, as is raw celery and carrots.

It isn't just curry. I like the flavors and textures of most Indian food. I can't think of anything I have tried yet that I don't like. I like that a lot of spices are used, but everything isn't neccessarily spicy (as in blow smoke out of your ears spicy). Now I am craving a plate of Rogan Josh and some naan!

Papadums with mango chutney - I developed a taste for this when I lived in Europe, of all places...

And I can relate to megan77, except substitute Peruvian for Indian.

Can't wait till my next trip to the local Indian restaurant, yum!

I'll take you up on that! I love Indian food, but nobody else I cook for does. I could probably get them to eat Tandoori chicken, how can I make it without a tandoor?

I love everything everyone has mentioned. For me, I especially enjoy the consciousness Indian food is made with--a respect for you and spirit

I also love the fact there are many vegetarian choices Yay!
