Rabbit is not gamey at all is it ? It is about the mildest meat you can have in my experience anyway. Hare is more gamey though.

My husband shot white tail deer in TX. Had the meat professionally processed and it is absolutely the best. I use a lot of garlic (same with lamb... lots of garlic cloves stuffed in the leg o' lamb). Seasoning is key.

When my brother used to hunt, I always enjoyed his venison. He made some venison jerky once and it was great!

Love lamb, too...first time I had it was at a Seder meal in college...yum!
Alligator and shark are good, too...been a while, though.
