I made too much last night. I usually never have leftover fish...or just enough for the kitties to get a treat. But last night I ended up with two nice size pieces left over.

I guess I could mix it with mayo and stick it on a cracker...any better suggestions?

Similar, but the filling is much creamier, the crust more delicate.

When I make them, I start with a basic cream sauce (blonde roux and some milk), then the flaked salmon, some minced onion, and herbs. (I like dill with salmon). Then pat it into something like a 8x8 baking pan, cover with wrap, and refrigerate it for two or three hours until it firms up. Then roll it into balls, dip in beaten egg, then crushed saltines (or you could use bread crumbs but the crust won't be as light), then place those on a plate, squish them into a patty shape if you want, cover and refrigerate another two hours or so. Then pan fry them. They are to die for, and really worth the extra prep time.
