We LOVE the smoked sausage at Cracker Barrel restaurants. In 2005 we moved to western Washington, where there are no Cracker Barrels. Last fall we bought some frozen sausage in Montana and carried it home in our ice chest. I'd like find a source for ground smoked sausage. I haven't had any luck on the internet. I see a lot of smoked sausage that's firm, like Polish sausage but I'm looking for ground roll sausage. Any ideas? Thanks!

Make your own smoked sausage patties! We did and it is easy. I bought a couple of rolls of ground sausage, sliced them into about 2" patties, then flattened them to a 4" in diameter & about 1/2" thick patty. Fire up the grill (preferably a smoker) with added hickory chips. I used a couple of disposable aluminum pans for the patties to keep the grease off the coals. Close the lid and let them smoke at about 250 degrees for an hour or two -- LOW AND SLOW --- check them after a half hour to see how they are doing. They will shrink a lot and absorb that great smokey flavor. When done, transfer them to another aluminum pan and IQF (individual quick freeze) them. When frozen, transfer them to a freezer bag. They are ready for you anytime - just nuke (microwave) one and slap it inside a biscuit. I keep sliced cooked biscuits in the freezer too. mmmm-mmmm!

Hey Cindycat, I have been trying to find Cracker Barrel smoked roll sausage also. It used to be sold in the resturants. But, no longer. I recently contacted Cracker Barrel customer service . Their reply was to look in their website. I did and it is not there! Emailed them back and no response. I have heard that Purrell makes it. But, have not found it.Cracker Barrel's sausage come in a burlap material and was reddish in color(smoked). If you or anyone else finds out where to buy it, please contact me. Thanks
