Either Crystal or Louisiana HS. Hey it's not like they jump off the shelves down here..Tabasco is considered 'adventurous'.

Bah!

1 tomato, diced
1/2 to 1 serrano, minced
Sea salt to taste
1 clove minced garlic

Let it sit out for a while.

Don't put it in the refrigerator, it will kill the tomatoes' flavor. Just make it fresh. It takes 2 minutes and is better than anything you could buy.
No fresh lime juice? Barbarian.

SRIRACHA hot sauce. Beware of the addiction. It tastes good with almost EVERYTHING.

cheese, pizza, french fries, chips, pasta, soup, rice, deli meat... you just can't go wrong! Similarly to that hot sauce radio commercial: "I put that s*** on everything!"

I usually keep it on my kitchen table for easy access since I reach for the Sriracha sauce for almost every meal. But it occasionally has that odd vinegary smelling sticky sap leaking from the cap if I leave it out whereas it wouldn't in the fridge. Does that happen to anyone else? I've been through many bottles so it's not just a defective bottle.

Sriracha is delicious and makes even the worst food enjoyale. I also like Louisiana Hot, there's nothing that wakes me up like a cold RockStar drink with a few squirts of Louisiana Hot. (the sugar negates the heat but not the flavor)
