Apparently yesterday (Saturday) was National Pancake Day which I didn't know until later in the day, so I missed celebrating the Pancake's special day - a terrible oversight! But I made up for it this morning .... we had Blueberry Pancakes with Maple Syrup. Better late than never, they say

Good question.....

Waffles with bacon SOUNDS good but the bacon will surely give me a headache....

I've had oatmeal ALL week and I'm not in the mood for it.

Cereal will only cause me to be hungry again in an hour...

I don't feel like driving to get donuts...

Ugh....

Don't know what this should be called, just something I throw together.

Take a can of cresant rolls and pinch the dotted line together so it is just one rectangel. Cut into squares with a pizza cutter to fit in a muffin cup to make a crust.

Then mix up some eggs, 1/2 and 1/2, a bunch of cheese, bacon, chives, mushrooms, and I had some leftover Stouffers spinich souffle that I put in. Mix it all up. Pour in the muffin cups with the dough mashed to fit the cups and bake until it looks done. I added a little more cheese on top and we all ate it up this morning. Is was sooo good.
