If you are (or have been) in a gourmet club, what do you think makes one successful?

Yesterday at a women's club lunch, someone suggested starting one. She is thinking perhaps along ethnic lines... German, Swedish, Italian, etc. I can also imagine having other themes like seafood, or truck stop/diner food, or comfort food, vegetarian...

Does it work best if the hostess makes all the food when it's her turn, or if she provides recipes and everyone brings a portion of the meal?

Any suggestions? Probably the biggest key to success if if the members want to spend time together or not.
