We make them ourselves. I'm okay with a rare burger, and we always preferred it, but lately dh has become wimpy and wants to cook them longer.

I used to go to Cheeseburger in Paradise a lot in college. And they'll cook a burger rare (at least, in Virginia), which amazed some friends from other states.

I honestly don't worry about it too much. My grandmother has the tendency to eat raw ground meat when making meatloaf, meatballs, or holubtsi and is 92. Besides, the only person I know who got E.coli contracted it from the salad bar at work.

Here's the general rules for food safety in rare hamburgers:

Do not eat store-brought frozen meat patties rare unless the package states that it has been irradiated.
Do not eat store-bought preground meat rare unless the package states that it has been irradiated.
For the most part, buying USDA Prime or Choice Steaks at the store and grinding it yourself will be safe.
Do not eat fast food burgers rare.
Most non-fast food chain restaurants use USDA Prime meat for beef. Usually, it is okay to eat these rare.
Always check the restaurant's reputation before you commit to eating the meat rare.

Three things:

1) USDA Prime and Choice are NOT indicators of food safety. They are indications of the fat marbling through the meat.

2) If you are truly looking for food safety, you should grind the meat from larger roasts rather than steaks as there will be less bacteria in an intact roast.

3) Very few restaurants serve USDA Prime as the cost of the meat would be prohibitive. Also, why would you pay for the extra marbling when you could use a leaner cut and add additional fat trimmings?
