Make roll up sandwiches, Spread a tortilla with some cream cheese & ham & lettuce or whatever you like. Roll it up, & then cut it into slices, Pinwheel sandwiches.
You need some protein at lunch time. Or make an egg frittatta n the microwave, on your day off, it is a good way to use up any leftover or fresh veg & meats too, Just throw them in the egg batter & microwave about 7 or 8 minutes ( for 6 eggs) You can have a slice a day for the work week.

well i am a gym rat and lift weights every other day and the days i don't lift i run 5 miles so my weight is a pretty lean 169 lbs . i was 205 3 years ago when first diagnosed but i ate soooooo bad .

Or bring a banana & a tangerine.
I had a frugal Uncle who only took fruit for lunch. IDK how he got by w/o protein. A banana is a must though I think for a really frugal lunch. And to help fill up. They sell bags of tiny apples too. Specifically for lunches.
Any ideas for frugal lunches to bring to work or school that require minimal dishwashing? For example, my go to are mustard sandwiches. No fork or dishes required. If I could find a way to pack leftover rice without having to wash a lunchbox, that'd b great
For the rice, just wrap up little "packets" in plastic wrap. Throw a fork or spoon in your lunchbag and you're good to go. You'll need to give the spoon or fork a rinse and wash good when you get home.
I precook some meats (mostly shredded chicken or pork) for convenience then freeze in packets like this. When I need a quick protein for dinner, I grab a packet from the freezer and can make quick tacos, BBQ sandwiches, etc etc.
I roll up burritos (rice, meat, beans, with salsa on the side) in a large tortilla, then heat it. Or, roll up turkey + ham + salami + veggies in a tortilla and eat it.
Leftovers from night before or defrosted TV dinners. Fruit, yogurt....That is, if you have access to microwave someone didn't try to use for 50% of lunch break ... I always just kept silverware in my desk. Can do cans of soup, ramon or oatmeal packs.
Burrito rolled sandwiches are nice if you keep lettuce/tomatoes and just cut up whatever meat you had night before. Bean or egg burritos are easy. Wrap up in plastic so you can microwave it.
