Not something I've given much thought to, at least not in a "what's my favorite shape" sort of way.
Some that stand out to me after just now glancing at the map:
Wisconsin
Minnesota
Missouri
Arkansas
Kentucky
Maybe Louisiana
Maybe Illinois
New Jersey and Massachusetts get honorable mention

100% biased here, but I have always thought my home state of Minnesota looks pretty cool. Like a square cookie that someone took a bite out of.

Maryland, Mass, Michigan, Idaho, Texas, North Carolina, Wisconsin and Delaware all seem pretty cool to me. IMO

California, Florida, Texas, Alaska and Hawaii all have unique and what I'd consider the most recognizable shapes.
