Take a look into Lake Weiss in Alabama.

Alton Brown from the food network has a house there. It's a steal from a price perspective. And it's halfway between the small cities of Gadsden, AL and Rome, GA, and about halfway between the larger cities of Atlanta, Birmingham, and Chattanooga.

You said you checked Texas. Did you look at Lake Nocona ? Some Very nice homes on the shoreline. Sounds like what you're looking for.

I just looked it up. Seems a bit too far from Dallas. We’ll be commuting most days. But I appreciate the recommendation.
