I think Southern hospitality is real, and that it is alive and well in Winston-Salem. You don't have to go into a rural environment to find it. I've lived in other parts of the country, and I think that North Carolina is the most friendly and hospitable place I've lived. People are more likely to strike up conversations and ask you questions than in more reserved regions of the country, but you only have to answer as you are comfortable, and the majority have social skills and won't pry if you give off signals that you're not comfortable. So, yes, you may be able to find what you are looking for "down here." Check out greatschools.org to read reviews and see school ratings. Of course, this is not shaping up to be a normal school year, and I wouldn't recommend coming down for a visit right now unless you have to, because our virus numbers are not good right now.
