I suppose if we are going to cook traditional style, you start with a hole big enough to put a small Toyota truck in. Put in a nice layer of luau rocks. Build a big fire (let the fire department know first). Crack a keg while waiting for the fire to burn down. Share it with the fire department since nobody remembered to call them. When it's down to a deep bed of coals, add in a pile of banana trunks. Put in the pig that's had hot rocks put inside, wrapped in banana leaves and ti leaves and chicken wire. Add in the several hundred laulau, the four or five turkeys ready to roast, cover all over with more banana leaves, ti leaves, a layer of burlap and then shovel a layer of dirt on top of that. Crack open the second keg. When that's done, open the imu and have dinner. You need to have the right number of folks helping you empty the kegs in order to get the timing right plus someone needs to help eat everything once it's cooked.

I missed more luaus that way. Being with the guys who would get the kiawe, river rocks, banana stalks and luau leaves, and then watch the fire all night long. Part of our safety procedure was to have plenty of liquid around, just in case. Sometimes we'd over stock.

The traditional way to cook turkey among my neighbors was to order it from one of the hotels and avoid turning on the oven for hours. Or eat at the buffet at Turtle Bay..
