With Thanksgiving fast approaching, I'm sure many of us will welcome a little refresher on how to cook a turkey island style... with Auntie Marialani !!

That one is always fun. What's that other holiday tune? Something about the roosters in Kalihi and adobo? Well, we gotta do turkey day before we get to Christmas.

The real secret to cooking Pelehu local style is to stuff it with SPAM, (remove the SPAM from the can first, if you don't, you'll find it's a mistake you don't make twice. I lost a perfectly good Avacado colored Whirlpool oven that way!) Turn the oven up to Eleven. Let roast for 90 minutes, or until the smoke being emitted from your oven reduces visibility to the point where you can no longer find you beer. ( secret to avoiding the lost beer is to duct tape a few to your okole) IF your oven does not go up to Eleven, and, you're fortunate enough to live near Pu'u O'o on the Bigger Island, just grab some fishing gear, a long surf casting pole is recommended, along with about 100 feet of 200 lb test SS line. Cast your SPAM stuffed Pelehu into the nearest vent, let steam until it expands to about twice its normal size, then carefully remove from the vent.. Insert a straw into the Pelehu to relieve pressure, and enjoy!!!
