Personally I hate that whole look but that's just me.

This. Vacuuming stairs is pretty low on my list of favorite things to do. Plus it's not really my style. A little (ok, a LOT) on the showy side with no real practical reason for it. Waste of space. IMO of course.

Pretty. We have an unusual staircase and my two kids love it.

A double wouldn't bother me.

Check out toll brothers reputation. There are states they are banned from building in.

Those homes are beautiful and quite ornate. I personally do not care for a double staircase, and other than keeping it clean, walking up and down those stairs a few times a day would not be for me. I have two staircases and I was tired of them before we totally moved in. I can see it appealing to young couples or professionals where image is important to them.

Some people would think it's ostentatious, some would love reenacting scenes from Gone With the Wind.

I would not think it INCREASES a home's value, and depending on how long you plan to live there, the finishes they use on the staircase will inevitably look dated, which would take a significant cost to re-do on a staircase like that. (Think of the carpet wraparound look on staircases of the early 80s.)

The one thing that bothers me is that the interiors of those models seem WAY too ornate for the exteriors they're showing. The elevations look like rather typical suburban houses, while the interior pix look like palaces. Just a weird disconnect I noticed.

I think it's a bit pretentious for a house of that size. Maybe in an 8,000 sq ft house. And I agree about the vacuuming part.
