I recently purchased a new home that has a built in grill and mini refrigerator in the backyard. Since it will be enclosed under the island countertop and outdoors it seems like my options may be limited or I should say quite expensive. I'm in Sacramento and the weather here can get up to 105 degrees +/-5 when a heat wave rolls through in the summer. In the winter it can get down to the low to mid 30's. the front of the fridge would be exposed to rain unless covered up.

I just looked today and the slot for the mini fridge has quite a bit of breathing room. The enclosed area has about 6" on the left and right side. I guess depending on the depth of the fridge it could have also up to 6" or so of free space on the back. On the back and right side there are small vents in the space. The built in grill is right next to the fridge on the left side.

I'm just wondering since it is quite roomy with the space for the fridge and vented that I would be able to use a freestanding mini fridge (that could handle the outdoor temps)?

Any thoughts or suggestions?

We have had inexpensive under the counter fridges in several patio kitchens. Currently one is behind a wooden door which we insulated. We defrost it when necessary. DFW has 100+F in summer and goes to the 10F in winter.

When we were looking for a refrigerator to put in our unheated garage I found out that new 'standard' refrigerators will not work in that environment. Something about the new energy efficient designs not working properly below 50 degrees. We ended up getting one that specifically stated it could be used in unheated space. It turned out to have another advantage - There was no freezer compartment it is a full height refrigerator. I think they actually took an upright freezer unit and reset it so it ran in the refrigerator temperature range.
