So under the sink, there is the hot valve and the cold valve. The hot valve has a split where a flexible tube extends to the dishwasher to supply it water. We took that flexible tube off because we are switching out dishwashers but hit a snag while doing it (and we don't fully know what we are doing. Proper intallers come Monday). We shut off the hot water valve. No hot water to anything.
Question: When we turn the kitchen sink on using cold, but the knob veers toward the hot, underneath the sink, water spurts out of the hot water valve split where the flexible tube going to the dishwasher should go. The hot water valve is off. What is happening?! Let's say the flexible tube was on and we were washing dishes, why would water be shooting to the dishwasher through this flexible tube from the hot water valve split?

Since you have closed the h/w shutoff valve, there is no hot water pressure above that valve. Apparently you have a single lever faucet. When the lever "leans" to the hot side, cold water flows backwards on the hot side, since there is no hot water pressure to oppose it, and as you see, squirts out the d/w port.
What you needed/should do is cap off the d/w port until d/w is permanently installed.
Unless you somehow missed seeing it, there usually is and definitely should be a valve in the sink cabinet to be able to turn off both the hot & cold water to the faucet as well as any appliances such as a “dishwasher” or refrigerator ice maker.
I would definitely have one installed, it’s a necessity IMO!

Ideally... there would be a second valve past that TEE.

The hose that goes to the DW has some sort of end that attaches at the TEE.
You need to determine what YOUR fitting is (size etc) and find a CAP to go over the connection.
It's almost always a 3/8" compression.
Don’t use the sink until the “proper” installation is complete.
Or, use a piano hinge- they fix almost everything!
