Whaaaat??? Kimchi is rich in vitamins A and C, and due to its fermentation process is also rich in beneficial gut-boosting lactobacilli bacteria - great for optimizing your gut flora. Kimchi also has antimicrobial properties that may be effective against pathogenic bacteria, and the lactic acid bacteria formed during the fermentation of kimchi may also help your body break down pesticides.
Eat it regularly and see how your cholesterol level drops. It can also assists in weight loss by controlling the appetite and reducing the blood sugar levels.
Fermented foods, such as fermented vegetables, are teeming with beneficial microbes that are lacking in many Americans' diets.

Make your own kimchi (request recipe, and I will post mine on Recipes Forum)

My Korean friends makes it for me - suppose to be pretty easy and I see lots of recipes on the web. I actually have Korean mint growing in my yard because it's sooooo yummy. Fermented foods grow good bacteria/probiotics. Good for your gut.
