Sorry. Life intervened. My son is renting an apartment in a residential building that provides WiFi as included in the rent but he sometimes does work from home and uses a Wi-Fi printer.

Wow. What state is this? I've never heard of such a thing as wifi being provided and INCLUDED in the rent. Is this some type of off-campus apartment? Was confusing when you said that YOU rented a facility and that YOU wanted to install some type of security cameras and that YOU were in a private home renting a room.
In this situation, I would definitely and highly recommend the Verizon internet route. Logging into a wife managed by someone else is absolutely not the way to go. I am pretty sure they are monitoring everything and all the websites visited. Plus, with all the other folks in the "facility" logging into the same wifi, speeds will more than likely be extremely compromised. That, and I am not keen on anyone having access to my entire internet search history which is what the folks who manage that internet have.
Neither Verizon nor T-Mobile home internet that were mentioned are available in my house, and I live in a populated area. To check if it is available at your location, you can go to their respective websites and enter your address.

We rent through a rental service a couple of months out of the year, typically someone's home that we do not know that comes with internet service. Our potentially exposed search history is something we have to accept.

MOST session connections these days are encrypted. So your average VRBO/AIRBNB owner isn't going to know what you've searched. They'll certainly be able to log that you went to google and may be able to piece together some sort of pattern based on where you go after that.
But let's be real here. Most are not going to have the know-how or really even care where you're going. Let alone spend the time, money and effort on something that will bring very little value to them.
Is it possible? Yes. You can certainly setup a SSL proxy (sort of a man-in-the-middle attack) or other tools to snoop on people. But highly unlikely given the cost for a commercial product and the effort required for a home made solution. Again, it's certainly possible. But the chances/odds are probably similar to being unlucky enough to be renting from a serial killer.
