Anyone ever been?

I have been really interested in making my own sushi for quite some time but I cant figure out where to get the meat. I figured they might have it or at least have some other stuff.

Can anyone direct me where in Jax to get Sushi grade salmon, tuna or anything else? The sushi places have to get it from somewhere and I am sure somewhere sells it I just need some help.

This has been asked before in the forum, and no one has really come up with an answer. As where Japanese reataurants get their sefood from is a wholesaler, who can't/won't sell to you as an individual. The best answer supplied was try a seafood retailer out at Mayport Fl. on the docks or ask around at local seafood markets. Or try Safe Harbor Seafood on Hecksher Dr.

I believe most sushi type wholesalers are out of south Fl. thats why south Fl sushi places seem to have better grades of sushi than what you get here.

You can mail order it. BTW technically there is no such thing as "sushi grade." It's just a marketing term. You have to trust your supplier. And your supplier's supplier.

Sorry I can't offer you a better suggestion locally. I believe I've known people who would just go to a decent grocery store like Publix and use their fresh fish, but not positive about that.

The Sushi FAQ - What is sushi grade fish and Where Do I Buy It? That's a great website and the company Catalina Offshore Products is a great supplier of ''sushi grade'' seafood and accoutrement's. But most people don't realize that real fresh fish(never frozen) is not ''sushi grade'' that freezing is one step that's required in the sushi process to kill certain parasites. Even when I take my boat offshore and catch tuna and snapper the first thing I do is properly bleed them out, then immerse them in a slurry of near freezing ice water then take them home and freeze them quickly overnight. Then serve them only after they have thawed out almost immediately after all that. Just about all the salmon that you can get here from stores like Publix, Winn Dixie and from seafood markets is previously frozen except for the packs of Nova Lox which are smoked and lightly salted.

yeah, sushi companies advertise that their fish is flash frozen on the boat. like it's a good thing. and well, it is.

I live in Central Florida, and the quality of pacific fish that I get here is not so good. I found a company that I have been ordering from for the past two years. The quality is exceptionally fresh, and they air ship it to you overnight for a small fee. They also have assorted sushi packages at discounted prices. Check them out at catalina offshore products, they are based in San Diego, Ca....[url]http://www.catalinaop.com/.............I[/url] highly recommend them. Good luck
