A few years back, my dad was in Vegas for a convention. I don't know how the subject was brought up, but the taxi driver said that there were gated communities within gated communities. Is that true?

Yes. There are gated communities inside guard gated communities.

Let us see. Painted Desert, Red Rock Country Club and Spanish Trails come immediately to mind.

And note that there are some gated homes in some gated communities.

I would imagine so. In all fairness, I doubt people who buy the more expensive houses ($5+ million and up) want "regular people" to have access to them. I'd imagine that places like The Ridges, Spanish Trail, MacDonalds Highlands, and the Red Rock Country Club have a setup similiar to what you're describing.

Varies...celebirities have more problems than the rich and more need for security.

There are many 5 million and up houses that have simple driveways off public streets.

Many go for simple isolation. There are pockets of very nice ultra homes that are simply not obvious.

The Legacy Estates in Green Valley is gated behind gates. Southern Highlands has gated enclaves within the gates also.

McDonald Highlands doesn't to my knowledge, but some of the lots they offer have the equivalent of private drives just to reach the residences, which are at considerable distance and elevation from the main road.

I have always enjoyed seeing the high end homes Vegas has to offer.
