Call your local high school (or other schools in your district) and ask

You can also try churches and synogogues as they may not be using their religous school classrooms during the summer.

Default Classrooms

Check out Conference and Meeting Centers of Long Island www.cmcli.com as they have several facilities that can accommodate classroom-style meetings.

You could also try conference rooms at hotels - they often have classroom setup options (white boards, projectors, etc.) available. I've been to some corporate stuff at the Marriott by the Coliseum, and they have a pretty good setup there.
