Pizza is all about the sauce and the dough. Any real NY Pizzeria uses a quality blend of whole and part skim mozz.

NY pizza sauce (especially Sicilian style) is generally on the sweeter side because of the added sugar. They all start with the same canned mix of puree and whole tomatoes.

It's the water that makes the dough what it is.

Some of the best NY pizza I have had is in Brooklyn, the Bronx and on LI.

EDIT: To add that NY Bisque or any kind of Seafood dish for that matter, can't touch the real McCoy from New England.

Is it really the water? I currently live in the south and the bread here sucks. Even when people attempt to make it like it is in NY, it still doesn't taste the same. What is it about the water?

It's New Yorks hard water and mineral content from the tap water that gives it the taste.

Many places across the country have had NY water shipped to their location in attempt to replicate it's authentic taste.

Just a side note- NY pizza is not known for it's sweet taste. It's more the crust which sets it apart. But overall, NY pizzerias use the best cheese and homemade sauce of their own distinction- they obviously vary by establishment.

I was speaking only for myself. For me, pizza is about the cheese. I've had a lot of pizzas from everywhere, and if there isn't good cheese used or the cheese coverage on my pizza is skimpy or poor, the best sauce and crust isn't going to save the pizza eating experience for me.

Default Looking for NY Style Pizza in Ma

Thanks everyone for your help. I think I'll check out Expresso's in Fitchberg. BTW, I'm 100% Greek, but I know we don't do pizza. As far as whoever said the Brown Jug - yes, I agree it's pretty good, but too far for us. Whoever said Pizzeria Regina at the mall food court -- no way, not even close to the real stuff. And Bertucci's? No thank you. It's okay, but it's not the good stuff.

I do make my own pizza, but it doesn't come out like the real italian style.....could that be a problem with my genetic greek make-up?

I will keep searching. Keep the suggestions coming....
