Sorry, I couldn't find a forum here related to languages and I figured this Montreal one would have users who know have knowledge in French.

I've been applying to jobs at grocery/retail stores and fast food places and on the application forms that they give me, they ask why I want to leave my current job, and my answer is that I want new challenges. I've been translating it in French as: 'J'aimerais de nouveaux défis."

Is that a good translation because I've been having second thoughts about it.

Maybe les instead of de.
Or...you could also say.
Je voudrais advancer mon carriere,

The sentence you are proposing is fine.

But I wonder why you need to come to a forum like this to find someone to check your French when you are living in Montreal surrounded by millions of French speakers?

It would be better to say

"Je suis à la recherche de nouveaux défis professionnels afin d'avancer ma carrière'' or something in that vein

He is saying he would like to, it is conditional.

You would not say what you will do - they haven't hired you yet...in Quebec that would appear as being very presumptuous
