Lots of ways to answer this question. You might search this forum for greater detail. But, the thing is, if you work with any of that you mention, it is common to email, or fax information.
Of course, you can perhaps find a local lender where you can do everything face to face. Or you can mail or fax docs as well. But a great deal of mortgage information, both from borrowers, and lenders, takes place online.

You would do that even with a local big bank right down the street from you? Don't you walk in and want to talk to a mortgage person and sit down in his/her office?
I use a local mortgage company, they create loans and sell them. I always use her but the last house I purchased I found Costco lenders had good lender fees and low interest rates. We still used our normal lady because she is awesome but that's a different story.
If you get it online, would just email your information (tax returns, social security card, driver's license, etc.) via email to someone online??
For a pre approval you have to enter the info, including your social security number, perhaps bank account numbers and balances, but you should not have to include documents at that time. In person pre approvals would usually require that.
