Ennio Morricone (Cinema Paradiso, the Mission, Good Bad Ugly, etc.), Jerry Goldsmith. So many films are adaptations of musicals that "film composer" isn't an easy definition. While I like some of John Williams work, he has a history of lifting themes, like mining Holst for the Star Wars music.
I'm a sucker for John Williams. I think his scores are not only excellent, but memorable. I've read/heard some of his interviews on what he was going for in terms of mood/style and think he's just genius musically. I love the score for Superman.
Danny Elfman's music always has this wonderful quirk to it. Of course, considering he works with Tim Burton alot, that may be part of the reason.
I like the idea that it's fairly easy to recognize both composer's work just by hearing it; even before you hear who composed it.
I also really like Jerry Goldsmith. He's a bit similar to John Williams in style.
Morricone's work on Leone's films was revolutionary, and his score for The Mission is some of the finest classical music composed in the 20th century. "Gabriel's Oboe" can move me to tears.
I like a lot of John Williams's older stuff, but not much of his newer stuff thrills me. Same with Elfman. He started out great, but now he's very blah.
