My wife, infant daughter and I currently live in the current Hoboken. But as our family grows, we're realizing that we'll soon be priced out of upgrading in town. We're looking for the next up and coming area, within commuting distance to NYC, and that offers good (or at least improving) schools.
(I saw a much older thread on here asking for the same thing, but thought I would try to get some new advice.)
Chatham and Madison are both beautiful, but I think we're pretty much priced out of those locales also.
I'm intrigued by New Brunswick. I like the downtown area; the shops and restaurants, at least. Are there areas/neighborhoods that are particularly nice these days?

Most of it is fine. Rutgers has gotten so big now that most of the city consists of college students living off campus. It's mostly a party town now with a few sketchy elements down Rt 27 near the Somerset border.
I live right outside New Brunswick now, hang out there all the time. Never once had a problem. Don't think it's a place I would move to with kids because the schools really are not good, but it is a fine spot for night life otherwise. For public education, any neighboring town except Franklin is fine. The best is Highland Park, but that is if you can afford it.

I hear you. Sounds a lot like Hoboken. Young people moved here for the bar scene, stayed and had babies. The schools are pretty bad, overall. But with all the babies in town, I would imagine they will only improve. But then again, maybe parents eventually do what we're thinking of doing and move away!

other then perhaps new brunswick i wouldn't consider any of the towns mentioned so far to be "up and coming". i think it may be hard to find such a place right now though, with the state of the economy, real estate market etc. towns are struggling.
i've always thought that keyport had potential, due to the fact that it's on the water, has a downtown, and fairly good commuting options to nyc. south amboy is another town that comes to mind. school systems in both of these towns though leave something to be desired.
finding a town that is affordable, with good schools and a viable commute to nyc is a tall order. realistically you'll need to compromise on something.
Amazing how many people want to live in NJ for CHEAP!! ...and have the best of both worlds. These are the ones that have kids and want good schools. Sure everyone that has kids wants their kids to go to a good school. You pay $$$ lots of it either to live in a nice town or pay to send them to a private school. Either way NJ will DRAIN you of all your money no matter what you decide to do.
