Hello, I am looking for anything from central Jersey up through the Essex Co. area. I have a 1 year old American Pitbull Terrier who weighs about 45 pounds. She is a sweetheart and super friendly but unfortunately these breed restrictions make things difficult.

Any advice or recommendations would be appreciated.

You'd probably have better luck with renting from a landlord in a multifamily house than w apartment complexes. Unfortunately, many of them will be biased against pit bulls, but there are bound to be some who are open to it. Try craigslist and check off dog friendly or contacting a realtor who can help you find a pet friendly apartment.

I don't know of any apartment complex that allows dogs that will allow a pit bull. They are a liability in the eyes of insurance companies and are always on the list of dangerous dogs at any apartment I've ever rented that allows dogs (even in Iowa). As previously mentioned you may have better luck renting an apartment in a private house but again, if the insurance company the owner uses will not cover pit bulls you would be out of luck.

Someone suggested to me that I should just look for a place that allowed dogs over 25lbs and say she is a mix.

I will give Craigslist a shot.
