What does the New Jersey flag signify with its crests, certain symbols, and the two (goddesses?) at each end? I've seen the NJ flag a lot in my life, just thought would be nice to discuss it. I do think it's a nice design.

Well, for starters, the colors (buff background and "Jersey Blue" details) represent the colors of the local troops during the Revolutionary War.
George Washington liked the colors so much that he adopted them as the official colors for all of his troops, even though most of them had to continue to wear their own clothing, due to lack of funding.

The two Goddesses represent the words that they stand above. The one on the left--"Liberty"--is holding a pole topped by a, "Liberty Cap", an icon of the Revolutionary era.
The one on the right--"Ceres"--represents the bounty of NJ's farms. The cornucopia that Ceres is holding symbolizes agricultural abundance.

The horse's head at the crest is symbolic of the one that was found in Jack Woltz's bed. It is a nod to NJ's colorful and much storied mob history.

I'm just kidding.

The horse is supposed to symbolize "speed & strength" according to Retriever's link.

Well, they got the "speed" part right if the self-proclaimed badass driving experts posting in the "Got 5 point speeding ticket" chest-banging thread, who think it's totally reasonable for any knucklehead to go 95 mph on the Garden State Parkway, are any indication.

Is it even possible to go 95 on the parkway? Maybe in South Jersey, but in the North there's just too much congestion....
