Biggest variables for you would be what time you need to get in/leave and how close you live to the train. I can leave my house ~5 minutes before the train comes, which helps. 7:02/7:06am train from RW/GR is quickest since it is the 1st express and there is less train traffic going into Penn and is usually a quicker trip than what's on the nj transit schedule. Going back home is quickest if you can catch the 6:16pm or earlier train from Penn. Otherwise tack on another 5 minutes to the range above.

Being a few minutes walk to the train station is a huge advantage and probably saves you at least 15 minutes each way of your commute (incl time to warm up the car, drive, find parking, then walk to the train from the lot). Even with a home within walking distance, 60min is probably the best case scenario (as you've alluded to) assuming there are no NJT delays, both on the Main/Bergen Line as well as the transfer at Secaucus to NY Penn, and no delays on the MTA subways either.
There are too many variables involved, 1:15 - 1:30 commute is more realistic for the towns mentioned imho, and the OP should expect as much.
