Are you ready to start selling some? Sounds/looks delicous! Bought some frozen ones yesterday. The are not the same but will have to do for now. One of my goals in life is to make my own tamales.

I'd like to know how to make tamales also. I received them in Texas as a Christmas gift but haven't found anyone in this area that sells them.
Jim, do you know of anyone in Ruidoso?

Maria's Mexican Food (10th St, Alamogordo) advertised last year as having tamales for sale in Alamogordo.

But I have never bought them there, so I have no idea how good or bad they are.

I like tamales, but I don't like them well enough to go to the incredible trouble of making them!! Whew.

It is an unbelievably labor-intensive affair. We used to buy them locally when I was growing up in Texas.

Cheryl, I don't know anyone in Ruidoso that makes tamales. I will ask our property managers (Cindi and Riker) as they have been in Ruidoso for over 25 years and know just about everybody in the village. We are looking forward to being in Ruidoso. Only three more days of work before we head out on Thursday morning. Our flight to El Paso leaves Phoenix at 6:35 am on Thursday.

As I mentioned earlier, I decided to forget it this year. I still have a few left from last year.It doesn't seem to be our family's favorite anymore..

Thumbs up Tamales for Christmas

Do you make your own or buy them?

If you make your can you share some receipes and or tips?

It takes me about 2 days to make mine and I use pork shoulder.

I seem to have the most trouble with the corn husks?
What/who has the best package ones? How long do you soak them?

And then tying them up Always a problem.

Finally, do you stack them on end to steam or lay them down in the steamer?

2 words guys-Tina's Tamales! She runs what used to be called the No Name Cafe on Sudderth, now Tina's Cafe, She'll make them anyway you want-we have a dozen pork and a dozen cheese/chiles on order for Christmas. But if you do want them, you better act fast, she is quickly selling out. Believe me, you can't go wrong-these are the best in town-if not in the whole darn county!!

Oh, and let me put a plug for Sunday after church brunch. Very busy then (no surprise there) but wow is her food great!! And JDTH, safe travels here! Beautiful snow on the mountains now.
