Don Pedro, an upscale Mexican establishment, will open Wednesday, March 9, for dinner service.
“It’s 100% traditional Mexican,” said co-owner Mauricio Hernandez, who named the place for his late father, Pedro Hernandez. (In Spanish, "Don" is a title of respect, like Mr.)
“We’re completely putting our foot down to show what real Mexican food is," Mauricio Hernandez said. "This is the not Tex-Mex, this is not nachos or chimichangas. We don’t have them. No taco salads or crunchy tacos, none of that.”
Don Pedro will serve soft taco dishes (starting at $14) with shredded meat (steak, pork and duck) and seafood (grilled baby lobster, shrimp and fried haddock).
Salads include the Milpa-Corn Field, with baby corn, squash, cherry tomatoes, fresco cheese, fried sweet potato and avocado with a non-spicy smoked chili dressing ($14).
And on the starters menu is Esquite Con Tuetano, corn mixed with white cheese, roasted bone marrow, chili mayonnaise and chili pepper ($24).
Executive chef Christian Alzaga is from Tulum, Quintana Roo, Mexico, on the country’s Yucatan Peninsula and has more than 14 years of experience preparing Mexican cuisine. Previously, he was executive chef for Mia Tulum, a restaurant and beach club in Tulum.
He and Hernandez, formerly a partner in Chili's Itacate, developed the Don Pedro menu, also featuring such entrees as smoked octopus with roasted pear, guava paste and roasted beets ($28); marinated duck with mezcal, pasilla chili, prunes and roasted figs ($23); and a rib eye steak alongside mashed plantains with chipotle, Brussels sprouts and potatoes ($32)."
