Everyone loves these "toasted" Oatmeal Cookies. In fact just this weekend we had two little fellows who snuck in and out of the garage, and headed to the cookie plate. I kept hearing the door shut.......then one minute later.....shut.........over and.........over.
Well, come to find out....There was the Oatmeal Cookie Plate.......
Half gone So this ones for you NEPA, for after your perogies.......if you have any room left.

Summerings Toasted Oatmeal Cookies
Preheat oven to 375

3/4 cup butter/ or margarine ( one and 1/2 sticks)
2 1/2 cups raw rolled oats ( Quaker is great)
1/2 cup of sifted flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup light brown sugar firmly packed
1 egg
1 teaspoon vanilla extract

Put out two bowl....save the biggest for the brown sugar/etc.

Ok in a nice large saucepan/skillet over medium heat heat butter until "lightly browned "( don't burn it)
Add your oats, saute' stir constantly until golden about 5 min. ...Remove from heat...let cool ( just set aside until the rest is done)
Meanwhile ...Sift flour with cinnamon, salt, soda and set aside.
In the larger bowl...combine brown sugar, egg, and vanilla...mix with portable electric mixer at med. speed until light.
Stir in your rolled oats and flour mixture until all is combined....
Now your ready to drop by rounded teaspoonfuls...3" apart. ( I tend to like larger ones...) ungreased cookie sheet.....
Bake for 10 to 12 min. util there is golden brown edges.....
Cookies will look moist, and thats good.........

Trust me these are a hit......We all had to giggle about the dish getting empty one by one. So much for the dinner which the little fellows were too full to eat..

Oh well, we'll know better next time.......and its a cute memory anyhow.

Have you tried them with raisins?
I love raisins & don't like oatmeal cookies as much without them. I was just wondering if they would be as good.

Ah, .........I would love them Watson.....But, hubby hates raisins.....and my three daughters too. So..........I'd have those cookies ALL TO MYSELF which would thrill me, but..........
( I have a daughter who is allergic to TREES.......she doesn't like fruit........so we wonder if it is because of her tree allergy??) She has an extreme reaction to trees,they had to stop a test on her PDQ.
I do have a recipe with raisins that I'll have to look up........it isn't listed to use them with this particular one.

I've always loved the one on the quaker box top.
I usually make a double batch, like I did today, and use 1/2 butter & 1/2 shortening.
My husband came home this morning (he works 3rd shift) and announced that fall must be here. I was baking.
He loves to come home to the smell of my baking.
