How bad would be the commutes along the following routes:

La Mirada to Santa Ana (55 & 5) starting at 9am [current traffic @9:30am shows 29 mins on Google]
La Mirada to Monterey Park starting at 8am [current shows 26 mins on Google]

Beware of the 'Orange crush' on the 55 in the morning and evening. La Mirada to Monterey Park might be slightly better.

I would regularly check both Sigalert and google during your expected commute times. Yellow means painful. Red means torture.

what would be the commute like from Irvine at 5/Jamboree to San Dimas? How many minutes would this take? Google traffic says 40 minutes but I have a hard time believing this.

It actually doesn't sound that far off. The traffic going north in the morning and south in the evening should be fairly light unless there's an accident. I used to do the reverse commute from Diamond Bar, which was a nightmare.

The Orange Crush is on the 57 where it meets the 5 and the 22.

The 55 is a parking lot in the morning heading south and in the afternoon heading north. The 5 can be bad almost anywhere at almost any time of the day.

The 55 is a nightmare. 9:00 a.m. would be slightly better, but my mother usually has to give herself 1 1/2 hours to get to my house in South Coast Metro (our wall is Costa Mesa, but we live in Santa Ana) from her house in Whittier, on the border of La Mirada, in order to get to my house by 8:30.
