I'd say regular flour, although I read somewhere that "regular" flour is the leftovers from all the specialty flours blended together, so it's neither one thing or another. The article said that it's best to buy a flour specifically for the purpose, such as pastry flour or cake flour.

Also I use seasonings typical for curries. Oh and I do have a couple seasoning mixes like adobo, sandwich sprinkle from penzeys
