The mother is so much more believable. She tells a story, owning her part and being calm and rational.

I agree. Plus someone previously linked to an account from a neutral third party who was there, who confirmed the mother's version. The child was not screaming - she was fussing mildly due to the long wait. Heck, I know adults who probably would have been whining if they had to wait that long for pancakes at a diner!
