Are you EVER going to have a conversation with them or are you just not going to answer the phone....forever. Come on....you guys are adults. Set some boundaries and limits and let them know what they are. FE, "Hey....it's been difficult for us to watch your kids so often but we are willing to still help you out 3 days/evenings a month. We aren't going to be available weekends or holidays but I'm sure we can work something out other times."
If you don't want to watch the kid ever, tell them so.
Be direct, they will really get the point that way and be able to make other arrangements instead of calling and wondering why you never answer...while you sit at home talking about them and their kid behind their back.....that's just immature.
