After the prosecution is done with each witness O'Mara or West stand up & show how the witness's testimony supports or at least doesn't contradict their case. If the prosecution is waiting for closing arguments to weave the evidence together to present their case it will be too late. The defense is swaying the jury step by step.
She can't testify otherwise she would have been banned from being inside the courtroom. That's why Zimmerman's parents aren't there because they could be called as witnesses in the case. Standard procedures in trials all across the country.
Yes she can testify. Parents of a deceased minor (under 18) victim can be the courtroom even if they are witnesses. This was established on Day 1. That being said I don't see what she can contribute that would show GZ's guilt. She can say 'he was a good boy' but then has to defend that when O'Mara of West ask her specific questions.

I don't see how the jury can get past Zimmerman's lies. His credibility is in the crapper...IMO. How do you outright lie on a TV interview and deny knowledge of something that you are obviously well versed in? That is just one example of this guys BS.
I've read several articles saying the final witness for the prosecution will be Sybrina Martin - no mention at all of the ME being called.

This would be pretty standard. The prosecution wants to leave the jury with a sad and passionate witness in their minds. The cross could force the defense's hand into sounding as though they lack compassion and are in "defense mode." This could be the bast case for the prosecution.
That sad, if Sybrina Martin makes a slight "outside" comment and opens a can of worms for the prosecution to dissect. For example, "Trayvon was a good son," would result in, "Then why was Trayvon visiting you that week? Could he have been suspended from school, for example?"
If she testifies then it will be interesting to hear what she has to say, but if she isn't prefect in her words it could be disastrous for the state.
