Seems it's because the parties have changed more than the individuals in those states. A lot more educated people in those states used to vote Republican before the party went hard right wing in the 80's and 90's. Most educated people just can't relate to the values of the current Republican party. Basically the Republican party is now the old Southern Dixiecrat wing of the Democratic party. If you're a moderate Northerner you don't fit with that crowd.
Most universities are very liberal. Thus, the people coming out of these universities will tend to lean more to the liberal side.
I go to what is considered a respectable and well-known school in a very liberal area and I've had nearly as many conservative professors as liberal ones. I'd say 1/4 are conservative, maybe 1/3 are liberal, and the rest teach material in a bi-partisan manner. And of all those professors, none have told me or the class who to vote for.
Liberal philosophy is all about nuance; it is not wrapped up in one-liner cliche's that make for good radio, or easier understanding for uneducated people.
With higher education goes higher percentage of Democratic voting. The rebuttal? You guessed it- they are indoctrinated!

Good post because it refutes the pervasive idea that Universities and Colleges are a bastion of Liberal brainwashing where it is somehow dictated that one must vote a certain way, the Liberal Democrat only way. Obviously this is just another fallacy. Unlike some extremely Fundamentalist churches where one is often told how to vote, under the pretext of it "being God's will". I don't know how widespread that is but check out the documentary "Jesus Camp" for an idea.
