To be fair, Cinco de Mayo is more of a Mexican-American holiday. The day isn't all that celebrated in Mexico.
That's true, but they never miss an opportunity to ham it up in mexico proper for tourists. It's fun either way. From what I've seen mexicans take the attitude of an opportunity to have a cook out the same way some americans have about labor day (without honoring the purpose of the holiday).

Why would there be a need to get back at the Mexicans?
I can see wanting to get back at the actual illegals, or get back at the US officials for not enforcing the borders, or get back at the ones who hire illegals.
