San Sui in Durham - very tasty and 1/2 price rolls all the time. We (me, wife and 12 yr old) get our fill and get out for $30-40 every Friday night. I'm always surprised that it's not overrun every time we go there.
I second Knoxes' recommendation for Sansui. We eat there all the time, Tommy takes care of us and have tried a number of rolls. Don't believe us, there wa s great write up in the N & O about 6 months ago. Worried that one day the rest of the Triangle will find out...
We love Hayashi in Wakefield. Eat lunch there about once a week. Not sushi experts, though, and have only heard from others who claim to be that it's some of the best they've ever had (including California and Japan).
I've been to Shiki and loved it, but I've been always a little afraid to try Sansui. It's kind of off on its own and has that 1/2 off banner up every day. As much as I would love to find something affordable, I get a little turned off by the thought of discount sushi. Is it really fresh?
Since Cary is 'over there' to me. Here are the the places I eat:
1. Hayashi (As someone above says -- a completely hidden gem)
2. Waraji - Best in Raleigh
3. Mura - (This place has gotten steadily better in the past 12 months)
I think Waraji is clearly a step above the other places I've tried. I'm in Chapel Hill, and I've had sushi at Akai Hana, Archira (new, in East 54), Momoyama, and one other place whose name I can't recall. Waraji is the only place that's in the same neighborhood as the places I used to eat at in New York and Boston. Not as good, mind you, but it's in the neighborhood.

It's very fresh! Their website says fish is flown in daily and they use local veggies. Their reviews are outstanding too. I'm not sure why you are hesitant because of the 1/2 off sushi? Most of the sushi places we eat at are "buy one get on free" and we are very picky. Please try it!
