As an ex-Long Island, NY girl who went to Wayne Wong's Chinese restaurant in New Hyde Park EVERY Sunday night as a kid/teenager, I'm pretty sure I know what you're after.
The closest I can think of that might be close to your description is Imperial Garden on Lead Mine Road in Raleigh. And it's definitely worth trying.

I think the big problem in The Triangle is that so many Asian restaurants try to do it all. Sushi, thai, Chinese, and a few Vietnamese items are on nearly every "Chinese" restaurant menu. And visa-versa.
I've not experienced that in any where else; and I suspect that is part of the reason we don't have particularly good Chinese and thai restaurants around here. Heck, the best pad thai we can find is from Tasu Brier Creek which is a sushi place. (the green curry is excellent, as well).
I really like Chopstix in North Raleigh off from Creedmoor and Millbrook. I love their sushi, my husband loves their Chinese foods. They have all the regular Americanized Chinese items on their menu and some of the best sushi I've eaten. Their miso soup is the by far the best I've ever eaten.

Totally agree. It was always our “go to” place for Chinese food. The kind of place my family went to when I was growing up in the 1960’s and 70’s. Is the piano player still there?

Wayne Wong's was our go to also as a kid, it was our "fancy" chinese restaurant.

• Five Star, downtown Raleigh (with their painted "Hide your cats" signs and tshirts) (they also have a Durham location but never been there)
• Tasu in Waverly Place
Been to Chopstix near Crabtree, as someone else mentioned, and I think it's RIDICULOUSLY slow AND disgusting.

Neither Five Star or Tasu are remotely what the OP asked about. (and I LIKE Tasu.)

Looking at the Tasu menu, it seems to be one of these "Asian Fusion" type of places serving Taiwan, Vietnam, China, Thai and Japanese cuisine
this seems to be a popular trend though it would seem that when they offer such a wide range they will have limited choices in one particular category
While Tasu even offers Hamburgers their Chinese choices are somewhat limited
We tried Five Star last week, I liked it however some in our group found the menu limiting
