thanks great thread on authentic Chinese restaurants, not really looking for the authentic stuff (chicken feet etc.)
I'm looking for just a really good Americanized Chinese place, Kung Pao Chicken, Peking Duck, General Tso's, Orange Chicken, Wonton Soup, Spring Rolls etc.
Just sick of the endless takeout places with pictures of food high above the cashier and the giant folded paper menu's that are exactly the same at every one of these takeout places

Brewery Bhavana haha
(I don't eat there since it's not authentic and overpriced but it's not a takeout place either so fits the bill for you!)
I suggest calling around near you to find who carries Peking Duck every day. Since they need time to dry out the duck skin, that should be the distinguisher of a dedicated restaurant.
Start with Banana Leaf in Cary and Taipei Cafe in Morrisville, which I found in Yelp reviews. Banana Leaf sounds like the best place for duck. Brewery Bhavana sound great for Dim Sum if you would go to downtown Raleigh.

I would check out G58 Cuisine in Morrisville (righ next to Fount Coffee). I haven't eaten there but have heard good things. It is billed as "Modern Chinese Cuisine" and is definitely a sit-down evening out kind of spot.
